After moving to Australia in the mid-1980s, Santokh began his culinary journey at the family’s first restaurant, Shehnai in Crows Nest, where he honed his craft and shared the rich flavours of his Indian heritage with Sydney. Today, alongside his son Inderpreet Singh Minhas, Santokh continues to lead Grace of India with the same passion and purpose that defined its beginning. Together, they blend traditional recipes with contemporary ideas, crafting dishes that honour India’s diverse culinary legacy while evolving for the modern palate.
